Besides, I still need to obtain a few neccessary fittings to make home-deliveries of liquid nitrogen viable.

Oh obtaining liquid nitrogen is no problem, except perhaps getting the cylinder up stairs if I get a large one (since BOC won't deliver upstairs). It's a rather useful material with a wide-variety of applications, a very important one being a water trap (especially in vaccuum systems), so while it's not exactly a substance you can find in everyday kitchens, lots of places make use of it. The problem is you still need to purchase the appropriate gear and regulators to broach the cylinder safely, and they tend to be rather expensive (or at least the last time I looked).

And the rapid freezing (actually it's freeze-drying to be precise) creates the smoothest icecream you will probably encounter (assuming you use all the proper ingredients in the first place), because the rapid freezing creates ultra-small ice crystals - literally creamy ice-snow.

Although care must be taken using it. Even with the sesile effect it is possible to burn yourself quite badly if you are not used to handling cryogenic fluids. We used to use it by the bucketful, but had to careful to avoid a student (well, an undergraduate, to be precise) seeing us do some of the stuff we did with it. Once, in Chem, there was a case of monkey see, monkey not understand, monkey try to do, and monkey get 3rd degree "burns."

MMMM Cherries.... I miss the central Markets. I used to work there many moons ago! In the McMahons Stall right in the middle next to the escalators. Do you know if its still there?

Yes, McMahon's is still there. The last place I worked in the Markets was Fred McMahon's, in the south east corner. I'm pretty sure they're the people I bought the raspberries from...

Cherries have been there for a couple of weeks. Cherry season, by my standards, starts when the organic cherries come in, and when the ordinary-good cherries drop below $10/kg.

Heh heh... Getting up to go to the Farmer's Markets at the Showgrounds was soooo worth it yesterday morning. Punnets of vine-ripened perfectly rip strawberries at $1/punnet!!!
