Feeling inspired by the price of roasting beef at my local supermarket, I cooked roast beef tonight. Roast pumpkin, roast potatoes, chinese-style sweet spinach, and purple mashed potatoes accompanied the main centrepiece.
Purple?!? I hear you ask. The variety is Purple Congo, they look vaguely like fat, dark purple turds. If they don't come washed, they take a lot of scrubbing due to many eyes and dimples. And when cooked, they stay purple. My mash was a lovely royal purple, even diluted with the large amount of butter I use... And they have a lovely texture and flavour.
I can't wait for the reaction if I persuade Mum to use them at a dinner party...
